Jay's lunch!


Enjoying cooking sooo much! Out of this week's Boston organics box: edamame, peppers, raw milk cheese, eggplant, pear. For the eggplant I baked it in the oven for a bit with some toasted sesame oil and nutritional yeast. Then added some red sauce and vegan almond cheese and a touch of the raw milk cheddar. Yummy!!!!
